SW Syn Free Chinese Chicken Curry


So after a ridiculously non-Slimming Worldy Christmas I am finally back on the wagon with one of my favourite fakeaway recipes! This is quick and easy and can be on the table within an hour which is pretty fast moving for a curry!

Ingredients (Serves 4)

Chicken breasts and thighs (4 breasts or 8 thighs)
2 Onions
Any other veggies you may need to use
Handful of peas
2 teaspoons of Schwartz Mild Curry Powder
2 cloves of garlic or a heaped teaspoon of lazy garlic
2cm of fresh ginger
1 bunch of spring onions
I green chilli
1 pint of chicken stock
3 heaped tablespoons of Fat free fromage frais
Fry Light (coconut if you have it, if not any other flavour is ok).

Method
1) Cut the chicken into bitesize pieces and season with sea salt and black pepper and fry in coconut fry light. 
2) All the chopped onions, vegetables, curry powder, garlic, ginger and chilli and simmer until they are all cooked through.
3) Once cooked through add the chicken stock and simmer for 30 minutes along with the spring onions.
4) Take the curry off the heat and let it cool for a few minutes before stirring in the fromage frais.
